I've always loved this beet. All of the nutritional benefits of beets and spiraled glamour to boot. Beets are a staple in any vegetable garden, easy to grow and so good for you. They are frost tolerant and can be planted in early spring.
This heirloom beet is named for a village in Italy and has been around since the 1800's.
All parts of beets are edible, young greens raw, older greens cooked and whole beets roasted, steamed or pickled. Beets are high in fiber (go fiber!), potassium, folic acid and antioxidants. Eat your purple and red foods!
Plant seeds 1/2" deep and 4" apart. Remember, beet seeds are a capsule with multiple seeds in them and they will germinate in the same place. You can carefully separate them after their true leaves have formed or thin to one every 4".
Even if I don't have time to separate or thin, they will grow next to each other. I simply harvest the biggest ones first giving room for those maturing later. Do as you will.
