Stunning bronze/gold/orange flowering tops can yield 1 lb. of grain per plant! This gorgeous thing can stand 7'-8' tall and seeds heads can reach 1'-2.5'! Incredibly drought tolerant and loves full sun. Plants will grow bigger and produce more with enough water.
This plant is edible at every stage. You can cook the grain as a porridge and even pop the seeds for a crunchy snack. Young leaves of all Amaranths are absolutely delicious and nutritious. These plants are ancient ones, they grow all over the world to feed the People.
Stunning as an ornamental too.
Direct sow the seed lightly, no more than 1/4". Keep evenly moist through germination. Amaranth's will self-sow if you let them. To capture the seeds, cut seed heads off once grain begins to ripen and hang to dry.
Mountain Gardeners - this is a longer season variety, they will simply be smaller for higher altitudes, or grow them in a very warm place with a bit of shelter.
