Lilly's Parsnip - 120-180 days to maturity
Parsnips need a long season, however, they benefit from frost and become sweeter in the colder months. You can direct seed them in very early spring and leave them in the ground until just before the ground freezes in late fall. They can grow in the mountain garden as long as you are paying attention. If left under mulch over winter, they will make their seed in the second year.
Parsnips like loose soil but are fairly carefree to grow. Plant them 1/4" deep and keep them evenly moist until they germinate. Mulching them will help retain steady moisture.
Parsnips are sweet and delicious and grace stews and soups. They really shine when cooked and mashed.
